Food related businesses, especially in Chicago, have recently become mired in a tangle of regulations and codes which make opening all the more difficult. The web of departments that must review plans and applications for approval have a myriad of procedures and regulations that must be followed. In addition to logistics and paperwork, the buildings that house approved food businesses can be an added liability since they often require vast amounts of energy and money to operate. Though fear not! Project teams that understand these issues are able to address them early in the process. All the while, producing sustainable design solutions to help reduce operating costs. Just like plants, buildings can help reduce water and energy use, protect air and water quality, recycle natural resources, and maintain surrounding wildlife habitat.
Our discussion will walk through the process of opening a new food business, from site assessment and code issues to construction and building occupancy. Supported by our completed and ongoing projects, we will explain the important components of restaurant, cafe, food production, winery, and grocery store design and implementation of sustainable architecture and agriculture. Food related businesses can be aesthetically pleasing while echoing the ethos of sustainable design. Aesthetics and sustainability need not be mutually exclusive goals, both can be achieved through thoughtful design techniques. Application of sustainable design results in a less expensive project to build and maintain, as opposed to traditional design.
Our recently completed projects represent a wide array of project types, furthering the movement towards a more sustainable food production and delivery system. Including a LEED certified cafe in Wicker Park, sustainably designed organic grocery in Bucktown, food coop in Logan Square, sushi restaurant in Lincoln Park, and winery in rural Illinois. We will also present our current work for the Lakeview Area Sustainable Master Plan, which focuses on reintroducing productive, public open space to the urban realm that can be used for energy production, water filtration, and food production.

Kitchen Chicago has invited Tom McClure, Vice President, and George Burny, President/CEO of Barrington Packaging Systems Group to give a presentation "Beyond the Test Kitchen: Commercializing Your Idea and Bringing Your Product to Market." Tom & George will be discussing a variety of topics, including packaging, pricing, building a brand, and product distribution.
BPSG is a single source packaging resource, with a customer base consisting mainly of small to medium sized food companies, principally in the Midwest. The BPSG management/ownership team has literally decades of experience in the food industry, retail, and classic packaged goods marketing.
This will be the second time the BPSG team has made this presentation at Kitchen Chicago.
